The Aspen Art Museum is seeking to fill a Sous Chef position in our new rooftop café space. The space aims to focus on local products and creating new experiences for mountainside dining and après hour. An ideal candidate has a solid culinary background in industry-leading restaurants and previous managerial experience. At the AAM Cafe we want to push the boundaries of the ingredients we are using and reinventing old and new ideas alike on a regular basis. We seek a candidate who wants to work in an open creative space to experiment with foods and techniques in order to push ourselves to be better chefs.
Requirements and Qualifications:
-5+ years in a hands-on culinary operation
-Solid understanding of culinary techniques including: pickling, braising, poaching, baking, fermenting, roasting, dehydrating, and sous-vide
-Experience with recording inventory month to month, ordering product from multiple vendors, and product storage.
-Experience in recipe development, Research and Development and cross-utilization within a menu
-Ability to lead a kitchen with a positive attitude, teach fellow cooks technique, and collaborate with outside departments

Hours and Work Schedule:
This is an full-time hourly position requiring flexible availability for weekend, evening, and holiday shifts. The Sous Chef position is nonexempt from the Fair Labor Standards Act and will receive overtime pay for all hours worked in excess of forty in a seven-day work week. The café is open from 10AM-6PM Tuesday through Sunday. Occasional night, weekend or holiday scheduled work is to be expected for special events and dinners.
